Berry pudding

Ingredients

A light dessert is a perfect finish for a romantic dinner. If you’re looking for a recipe of a dessert for your beloved, you may be interested in this English berry pudding. It is cooked in advance and takes only 20 minutes to make. You don’t even have to switch on the oven! All you’ll have to do is to remove the dessert from the form and serve to enjoy the taste of berries with your second half.

You will need square toast bread and 2 types of berries, i.e. frozen and fresh for decoration. Start cooking a day before the occasion, as the pudding needs to stay in the fridge under pressure for 12 hours.

Wash the frozen berries, put then into a sauté pan and add the icing sugar. Bring to a boil over high heat, reduce the heat and cook for 2 mins.

Strain the berries using a sieve. Reserve the syrup.

Remove the crusts from the bread pieces.

Layer the forms with cling film. You may use metal cake forms, tea cups etc. If necessary, cut the bread so that you can layer the bottom and sides of the form with it. Soak the bread in the syrup and layer the bottom and sides of the form.

Fill the pudding with berries, cover with the remaining soaked bread, fold the edges of the cling film to the center.

Put the pudding under pressure overnight. You may use glass jars filled with water. Put something flat under the jars so that the weight is spread equally. It may be a lid, a saucer or a piece of cardboard.

Unwrap the pudding just before serving, turn it over onto the plate and remove the form and the cling film. Decorate with fresh berries and serve with yogurt, ice cream or whipped cream.
