The cream cheese filling hidden inside provides the delicacy. The crunchy walnut streusel and a bit sourish cranberries complement the dessert. Besides, if you’re busy making Russian salad, your husband or even children can manage this cake as well. If you have to choose between a ready-made dessert and a homemade one, choose the latter. In a bowl combine the flour, baking soda, salt, cinnamon and instant coffee.

Wash, peel and puree the bananas (preferably overripe) with a blender. Add the eggs. Whisk the softened butter with sugar till fluffy. Combine with the banana mixture.

Add the sour cream and mix. Sift the flour mixture to the batter and mix again.

Prepare the filling by mixing the cream cheese with sugar. Add 60 g banana batter and mix.

Grease a baking form with butter. You may use any form but if you want your cake to look like a wreath, use a 25 cm one with a hole in the middle. Alternatively, you may use a round one with a glass jar in the middle. Pour most of the batter, leaving 180-200 g in the bowl. Spread evenly, top with the cream cheese filling leaving some space at the edges.

Pour the batter on top and spread evenly. Preheat the oven to 180°C. Make the streusel: chop the walnuts and combine with the cold butter, sugar, flour and cinnamon. Make a crumble and sprinkle over the cake.

Bake for 60-70 mins. Check the doneness with a toothpick by piercing a spot without the filling – the toothpick should come out dry. Let the cake cool. Make the glaze: combine the icing sugar with the salt, add soft butter and milk. Mix thoroughly and sprinkle over the cake. Decorate with frozen cranberries (optional).
