Step 1

Preheat the oven to 180°C. Wash the dried dates, pat dry and remove the stones. Roughly chop the dates and walnuts.

Wash and peel the bananas. Mash the flesh with a fork. Combine with the walnuts and dates. Add vegetable oil and mix.

Sift the flour, combine with cinnamon, salt and cornstarch. Add to the fruit and nuts mixture, mix. Pour the vinegar over the baking soda and quickly mix into the dough.

Grease the baking form (we used a 23x13 cm). Pour the dough into the form and spread with a spatula. Bake in the middle of the oven for 35-40 mins. Check the doneness with a toothpick – it should come out dry.
