Prepare the ingredients. Preheat the oven to 220°C. Rub the tenderloin with olive oil, salt and ground pepper. Put it into the heatproof baking form and cover with foil. Bake for 40-50 mins. Check the doneness with a thermometer – the temperature inside the meat should be 63°C. Alternatively make a small cut. The precise cooking time may vary depending on your oven.

Meanwhile make the sauce. Remove the stones from the plums, chop the flesh. Combine with honey and balsamic vinegar in a small sauté pan.

Bring to a boil, reduce the heat and continue cooking for 10-15 mins, stirring occasionally. Do not cover, so that the sauce could evaporate a bit and thicken. When the plums are soft and release their juices, remove from heat, cover and leave for 10 mins.
