Austrian style stuffed chicken

Perhaps, every country has a recipe for stuffed poultry, but the stuffing changes from place to place depending on the tastes of each people. Thus, grains are typical for Russian cuisine, but in Austria people tend to stuff their ducks, geese and turkeys with a combination of white bread, onions, apples and nuts, or, as in this recipe, with oranges, apples and raisins. It is not a very typical combination to our taste but it makes an interesting balance between sweet and slightly sourish taste. This stuffing can be used for any type of poultry.

Step 1

Preheat the oven to 180°C. Tear or cut 100 g slightly stale bread and soak in milk at room temperature for 20 mins. Stir from time to time.

Peel the oranges and cut between the membranes to segment them. Peel one apple, remove the core and chop.

Add the chopped apples and orange segments to the bread, add 1 tbsp raisins. Season with salt and pepper, add ginger and thyme leaves. Mix.

Wash, pat dry and stuff the chicken. Hold together with toothpicks or a thread . Rub the chicken with salt and oil and put into a big baking form. Bake for 1 hour. Baste the chicken with the juices from time to time. If there’s no juice, add 100 ml stock or hot water to the form. Important: the cooking time is suitable for a 3 kg chicken. If you have a smaller one, reduce the time.

Meanwhile peel the sweet potatoes and carrots and cut them into medium-sized pieces. Peel the garlic and mince it or press it in a garlic press. Combine the vegetables with the oil, fresh lemon juice, salt, ground pepper and herbs. Leave the vegetables to marinate.

After 1 hour of cooking, remove the chicken from the oven and put the vegetables around it. Return to the oven and bake for another 40 mins till the chicken and vegetables are fully cooked.

Tips:

1. We recommend serving this chicken with pomegranate seeds.
2. You may also use potatoes, cauliflowers or any other vegetables as a side.
3. You can substitute dried cranberries for raisins.
