Asian style warm chicken salad

Ingredients

A very simple and delicious Asian style chicken and vegetable salad is a nice way to diversify your family dinner. It is quick-and-easy-to-make, and very quick-to-eat! The salad can be served hot or cooled, and it will still be excellent.

Prepare the ingredients. If the beans are fresh, 200 g will be enough (if frozen, use 300 g). Wash and pat dry the chicken. Peel the onion, wash the pepper and remove the core with the seeds.

Dice the chicken (about 1,5 cm). Heat half of the oil and fry the chicken till golden. Don’t fry too much chicken at a time. If you don’t have a big enough pan, fry in two or three parts. This will make the chicken fry and not stew.

Transfer the chicken onto a plate.

Cut the beans at 1,5-2 cm. Half-cook in slightly salted boiling water. Reserve 3 tbsp water and pour off the rest.

Cut the sweet pepper in stripes.

Cut the onion in half, then slice thinly. Heat the remaining oil in a pan and fry the onion till slightly golden. Add the beans and sweet pepper. Fry, stirring, for 5-7 mins. The pepper should remain a bit crunchy inside. Add the 3 reserved tbsp bean water, cover with a lid and sstew for 1 min.

Remove the pan from heat. Combine the vegetables with the chicken. Add the soy sauce and black pepper to taste. Mix.
