This simple upside-down apple cake is an ideal baking to brighten a rainy autumn day. The moist sponge and soft apples in sugar syrup won’t leave you indifferent, even if you are a tempted sweets lover.

Wash and thinly slice the apples, remove the core.

Melt the butter in a deep sauté pan, add sugar, cinnamon and water, mix well. Bring to a boil. As soon as the mixture bubbles, add the apples, mix and cook for 5-7 mins till soft. Remove from heat.

Grease the baking form with some oil. Distribute the apple slices and pour the remaining syrup on top. If you think that the syrup will go through the form, wrap the latter with the foil from the outside.

Preheat the oven to 175°C. Remove the butter, eggs and milk from fridge in advance to get warm. Whisk the soft butter with sugar till pale and fluffy.

Add the eggs one by one whisking after each one. Add the milk and sifted flour with baking powder. Mix carefully with a spatula till the ingredients are combined.

Pour the batter over the apples and spread evenly with a spatula.

Bake in the middle of the oven for 40-45 mins. Check the doneness with a toothpick – it should come out dry. If the cake is not cooked yet but the top starts burning, cover it with foil.

Let the cake cool slightly in the form, then cover it with a plate and turn the form upside down, so that the apples are on top.
