    A savoury galette is a perfect appetizer and a way to quickly make an easy and exquisite dish using simple ingredients. Don’t be confused by the combination of apples and onions which seems unusual at first sight. The result is fantastic! The fragrant and crumbly pastry makes a good match with the delicate sweet and sour filling. Just add a glass of wine to enjoy it to full extent.     Sift the flour into a bowl in rub with the butter till crumbly.

    Mince the rosemary leaves. Finely grate the parmesan. Add the salt, cheese and rosemary to the flour. If you don’t have fresh rosemary, use some dried one.

    Add the egg and make the pastry.

    Shape a ball, wrap into a clingfilm and refrigerate for 30 mins.

    Meanwhile make the filling: peel, half and slice the onions, peel the apples, remove the core and slice thinly.

    Heat a pan, add the butter. Add the onions and apples to the pan, add a pinch of sugar and cook for about 7 mins. The filling should not be fried or pureed, just a bit softened.

    Preheat the oven to 190°C. Dust the work surface with some flour. Remove the pastry from the fridge and roll into a circle 3-4 mm thick.

    Spread the filling over the centre leaving 3-4 cm at the edges.

    Sprinkle with grated cheese and fold the edges to the centre. Brush the pastry with some slightly whisked egg.

    Bake for 25-30 mins (depending on your oven). Cool slightly and serve.
