Ingredients

New Year celebration without Olivier salad is not a celebration at all! There is a special recipe of Olivier salad in every house: someone cooks it with bologna sausage, others – with meat. As for us, we suggest you to use chicken breasts and a very unusual dressing, which will give the salad a special appeal.

Beforehand cook 2 medium-size potatoes and 1 large carrot in boiling salted water, then hard-boil the eggs. Let the vegetables and eggs cool completely (if they are warm still, pieces might stick to each other when mixed together. It's easier to cook them a day ahead and store in a fridge until needed). Finely dice the potatoes and carrots. Put the vegetables into a deep pot or bowl.

Wash the chicken breasts, pat dry and slice 0.5-1 cm thick. Season with salt and ground black pepper.

Heat a frying pan with a splash of olive oil and fry the chicken on both sides until golden. Transfer to a platter and leave to cool a little.

Finely chop one small onion, add to the vegetables.

Cut the eggs into small cubes, add to the vegetables and stir in.
